The farm

A dairy farm, replanted for cider.

The farmhouse dates to the 1700s. Where the herd once grazed, we now grow traditional French, English, Spanish and American cider apples, chosen for tannin, acidity and character. The trees are farmed with minimal intervention and never irrigated, which keeps yields low and the fruit concentrated.

Everything happens here. We grow and pick the fruit, then press, ferment and bottle it in the old barn. Like the farmhouse ciders of Normandy, ours are dry and fairly strong, usually around 8%.

In the orchard

Unirrigated, lightly sprayed, and a little scarred by the season. Cider fruit doesn’t need to look perfect.
